So do it, reach through the thicket — the rough & prickly bramble bush. A brief battle with briar reaps roses & raspberries.
Jam. You either jam with it, or it's not quite your jam.
This mouth-watering basil & raspberry spread is not truly jam though, as it is concocted rather differently - sans any sugar, boiling, or effort! It is thus a healthy alternative, and in my humble opinion, particularly tasty.
INGREDIENTS
1 cup fresh raspberries
1 cup fresh dates (*if using dried dates, soak in warm water for 30 minutes first)
2 Tbsp chia seeds
1 Tbsp fresh lemon juice
4 g fresh basil leaves
METHOD
Clean & disinfect a jam jar with soap & boiled water, and dry with a clean dish cloth.
Throw all the ingredients, in no particular order, into a food processor.
Pulse for 2 minutes, or until smooth and no large chunks of dates are present.
Scoop the pink mixture into your clean jam jar to refrigerate, or serve immediately for tea.
Tidy-up time! You do not want to leave remnants of this sticky concoction between the nooks of your food processor for too long before washing.
➺ Pairs deliciously with home-baked banana bread or vanilla ice-cream.
With sweet joy & lemon zest
