Pancake Sunday just got spunky.
Out of the box, fun to make, and dangerously delicious, a slice from this crêpe cake is enough to satisfy each family member at the breakfast table. See a slice as being proportionally one and a half pancakes!
My sister and I whipped together an Oreo-Nutella version for our first attempt, but I can foresee us crafting different versions in the future, like strawberries & cream or zesty lemon & cinnamon sugar.
This simple recipe splits into two: first the ingredients and method for the oreo crêpes, and then that of the filling.
HOW TO MAKE A PANCAKE
Ingredients
4 eggs
1/4 tsp salt
700ml milk
40g caster sugar
60g Oreo crumbs
30g melted butter
20g cocoa powder
2 tsp vanilla essence
150g all-purpose flour
Method
In a small bowl, whisk together the eggs, milk, vanilla, sugar, and salt.
In a large bowl, sieve the flour and cocoa powder and combine with a spoon.
Add the contents of the small bowl to the large bowl, and mix.
Stir in the melted butter and Oreos. We add the butter in here rather than with the wets, to avoid clumps.
Your mixture should appear smooth and runny enough to slide easily around the pan surface to make an even, medium-thick crêpe.
In a warm, oiled pan, use the batter to make at least 18 crêpes.
Stack them on top of the other as they come out of the pan - cooling is what we want.
NOW FOR THE FILLING
Ingredients
75g icing sugar
75g Oreo crumbs
2 and 1/2 cups cream
As much Nutella as you have
Method
Whip the cream until firm, right before it churns to butter.
Stir in the icing sugar and Oreo crumbs.
Smear this creamy paste on the topside of each crêpe, stacking each upon the previous one you smeared.
Once you have your pancake stack, smear the remaining creamy paste neatly on the top and around the sides if you have enough.
Drizzle some warmed Nutella on top in any pattern (not hot, so as to avoid melting your cream).
*Extra sugary option: spread Nutella on each crêpe layer before smearing the creamy paste.
When slicing into the cake, use a firm hand to make sure you have cut right through each layer, and that your slice is separated well, before pulling up and out. The slices sometimes fall on their side, a sweet take on ratatouille and lasagna.
I recommend this as a fun family project. Get silly & creative with it!
