The Fluffiest Feminine Flapjacks

Take a trip into the clouds with these light & airy Japanese soufflé pancakes.

*the trick to acing fluffy flapjacks is all about separating the yolks from the whites !


I N G R E D I E N T S
  • 3 eggs

  • 3.5 Tbsp milk

  • 3 Tbsp flour

  • 2 Tbsp white sugar

  • 1 tsp vanilla essence

  • a drizzle of oil [I use coconut]

R E C I P E

1. Separate each egg into its yolks & whites. An easy way to do this is to simply crack & empty the eggs into a bowl, and scoop out the yolks with your (clean) hands.


2. Place the 3 yolks into a bowl with the milk & whisk until combined.


3. Sift in your flour with the yellow mixture. The texture should be more gooey than runny once incorporated.


4. Beat the 3 eggs whites in a separate bowl to become stiffened.


5. Whip in the sugar with the whites until stiff peaks form. Remember the upside-down test!


6. Add half of the meringue mix into the yellow mix and incorporate them together well.


7. Fold the rest of the meringue gently into the mixture from top to bottom. Take care not to over mix: There can still be streaks of yellow and white.


8. Drizzle a small amount of oil into the pan, and remove any excess with a paper towel.


9. Over low heat, scoop a generous tablespoon of the mixture into the pan for each flapjack.


10. After 20 seconds, stack an additional tablespoon of mixture on top of each flapjack to create that thick layered effect.


11. Drop a few tiny splashes of water around your flapjacks and cover the pan with a lid. This retains moisture for the pancakes to cook through well.


12. Watch your flapjacks carefully, flipping them over after 1 minute. Allow the other side to cook for a minute as well.


13. Now for the favourite part: ✨decorating

Drizzle with syrup or melted chocolate, sprinkle over some icing sugar or edible glitter, top with raspberries or other fruit.


Makes 10 fluffy feminine flapjacks.
